RECIPE OF THE MONTH
Apricot Nibble Bread
2 3 oz. packages cream cheese (softened)
1/3 Cup Sugar
1 Tablespoon Flour
1 Egg
1 teaspoon grated orange peel
1 slightly beaten egg
1/2 cup orange juice
1/2 cup water
1 17 oz. Apricot-Nut quick bread mix
Combine cream cheese, sugar, and flour. Beat in first egg and orange peel. set aside.
Combine slightly beaten egg, orange juice and water. Add Quick Bread mix - stirring until moistened. Turn 2/3 of batter into greased and floured 9x5x3 loaf pan. Pour cream cheese mixture over top. Spoon on remaining apricot batter. Bake 350 degrees for 1 hour. Cool 10 minutes. Remove from pan and cool on rack. Wrap in foil and refrigerate.
